Sobayu is the hot, cloudy water left over after boiling soba noodles. It contains dissolved starch and nutrients from the buckwheat noodles. In Japan, it is traditionally served at the end of a soba meal. People often pour it into the remaining dipping sauce (tsuyu) and drink it as a warm soup.
